Lamb Rack Crusted Pistachio
Remove from heat and set aside ready to coat with the pistachio crust.

First the lamb racks get a light dusting of kosher salt and black pepper to taste then a quick sear in extra virgin olive oil. Place the lamb crusted side up over the unheated side of the grill and cook with the lid down for 15 minutes for medium rare. Cooking times and temperatures will vary depending on the size and type of your barbeque. Remove from the pan and cool on a rack.
